Beautiful Skin

Chips, crisps, mashed potato, dauphinoise, potato skins … There are few things as delicious as the humble spud. But just when you think you’ve seen it all, along comes another variation. The other night, at new Potts Point restaurant Teddy, they served up potato skins with an incredible class difference: filled with whipped cod roe & salmon caviar. Yum! And in case you’re wondering, the other dish in the pic is French breakfast radishes and French onion dip … a true meeting of national favourites.
