Two great Melbourne foodie friends came to Sydney this week and invited me to join them at Josh Niland’s fish restaurant Saint Peter for its 10-course degustation. I was nervous … his passion is using every piece of a fish, and I can be stupidly squeamish. But I shut my ears to some of the descriptions of what the dishes were actually made from, and just relished how pretty they looked, and the sublime flavours.
