Meet my three shipmates, and our chef, serving the most delicious local fare as we explore the Amazon in Peru for a few days aboard the Aqua Nera. The ship’s menu has been designed by renowned chef Pedro Miguel Schiaffino, using native Amazonian ingredients and seasonal produce from the rainforest to produce world-class cuisine. I remember surviving on dozens of packets of biscuits and water last time I was on the Amazon. It’s hard to imagine a greater contrast.
